Monday Meals: Classic Pot Roast

Monday’s Meal: Classic Pot Roast. I try to cook two big meals a weekend to get us through our very busy Monday-Tuesday-Wednesday stretch. One of our favorites is this delicious pot roast! It’s yummy, filling, and carries well as a lunch or dinner on the go!

Seasoning (There will be some left over): 1 TBS. each of garlic powder, onion powder, salt & 1/2 TBS. smoked paprika.

. Mix seasoning together and rub onto roast. Sear in coconut oil a skillet. Place in crockpot, top with diced potatoes and carrots sprinkled with leftover spices. Cook on high 4-6 hours. 😋
